The restaurant, in the center of Tignale, in time he was able to create a place among the senses of the discerning palate, thanks to a warm and familiar atmosphere. The name "Al Torchio" derives the centenary Torchio, renovated wooden, placed at the center of the veranda (recently restructured and closed to use also in the winter period). The kitchen is true and simple but at the same time rich in aromas and fantasy, combined to ancient flavors of tradition Bresciano-trentina with those of the Mediterranean cuisine: steacks of salted meat seasoned with organic oil of Tignale, rich salads and homemade lasagna, tagliatelle with Marinated hare, Pestom (typical salami cooked on the grill), Tiramisu of the house. The pizza is the queen of the house thanks to the wood oven and a pizza, capable of giving life to a fragrant pulp to long rising and not too thin. In our room, we can prepare foods that do not contain gluten, being able to choose between a wide ranges of pizzas prepared at the moment. In order to ensure that dishes are free of contamination by gluten, is placed a lot of attention in the storage and preparation of food (Department of Labor and ovens exclusively dedicated to gluten-free) and are used products approved by the AIC - Associazione Italiana Celiachia..

Oleificio Biologico

On a territory of about fifty hectares are ca. 14thousand olive trees in Tignale.
Are machined yet with patience and tenacity as many years ago and at times with the same effort for the position of the impervious ground, then pruning, plowing, irrigation and the collection is still done by hand. The olives are harvested in November and December with a ladder call "scalì"resting and linked to the branches, the olives parades from the branches with the hands end up in a basket bound in life, "grumial", those removed with pliers end up in networks previously placed on the ground. The crop is then placed in cassettes and fenestrated and airy and finally brought to the crusher.
In 1766 worked seven presses in Tignale, but most of the olives was transported in Gargnano, where there was also the possibility to sell the oil, whose production was ca. 90 quintals. The way we cultivate was considered withdrawn because the poor manuring, pruning every three years and the variety of olive trees little suitable for a constant production.
On the initiative of the cooperative dairy Turnaria also Tignale today has its oil mill. The plant was put into operation in 1998, is a continuous cycle, and with the centrifuge separates the sansa from the liquid then island of the vegetation water oil; after decanting it proceeds to the decanting and filtration. The oil produced in Tignale is Biological extra virgin olive oil of the highest quality

Guided tours at the oil mill every Thursday at 17.00 hours.
To purchase the products, the oil mill is open on Tuesday from h. 10 to 12 and the Saturday from h. 17:00 at 18:30.
